Summer: Dining Al Fresco and raw sauces from the Garden.
Easy Tomato/Lemon Raw Sauce.
The success of this recipe is based (like so many Italian dishes) on the happy combination of a few ingredients of the finest quality, and served in the natural time. season and setting.
Ingredients: Tomatos, Extra Vergin olive oil, lemon, salt, coarsely ground black pepper.
Seed tomatos to eliminate excess moisture and seeds. Chop into fine dice.
Boil capellini al dente. Don't overcook. It is important to let the pasta and sauce sit for a couple of minutes, covered while the ingredients meld. The pasta will absorb more moisture then.
When the pasta is ready, add oil, tomatos fresh lemon juice (no seeds) and black pepper to taste.
I serve it with out cheese. To me, the combination of an excellent olive oil, the lemon,pepper and tomatos are perfect. The cheese would overpower the balance of the other ingredients (or at least go lightly).
Don't forget to combine all ingredients and cover for a couple of minutes before serving. Capellini works very well in terms of clinging to the sauce and entangling bit of tomato.
